Ingredients

  • ½ gallon flavorless high smoke point oil, such as canola , peanut , safflower , grapeseed , or soybean
  • 40 cloves garlic
  • 8 Thai bird chiles , stemmed and halved

Directions

Combine all ingredients in a large stockpot.

Heat over low heat for 1 hour.

Strain , cool, and store in the refrigerator until oil smells off, looks smoky, or tastes rancid.
